<p><strong>Orange Cupcake Ingredients<br />
</strong>1. Orange marmalade (sweet), 125g<br />
2. Self-raising flour, 1 tbsp<br />
3. Eggs, 3 large (70-75g each) , separated<br />
4. Butter, 45g<br />
5. Castor sugar, 110g<br />
6. Grated orange peel, 1 tsp<br />
7. Orange juice, 2 tbsp<br />
8. Ground almond nuts, 100g</p>

<p><strong>Cupcake Paper Cups</strong><br />
8 medium paper cases</p>
<p> </p>
<p><strong>Easy Almond Orange Cupcake Recipe<br />
</strong>1. Gently heat orange marmalade and butter and stir until marmalade is dissolved.<br />
2. Boil for 1 min to thicken the orange mixture a little.<br />
3. Spoon 2 tbsp of the mixture into the cupcake paper cups in a muffin pan.<br />
4. Beat egg yolks, orange peel and half of the castor sugar with a electric mixer until pale and creamy.<br />
5. Add orange juice and ground almonds and stir well.<br />
6. Fold in self-raising flour.<br />
7. In a separate bowl, whisk egg whites with the remaining sugar until soft peaks form.<br />
8. Fold egg white mixture into egg yolk mixture.<br />
9. Spoon the final orange almond cake batter into the cupcake paper cups.<br />
10. Bake in preheated oven at 1750C for 25 min.</p>

<p>This almond chocolate cupcake recipe is extremely versatile, suitable for all occasions. I particularly love it for afternoon tea with friends. It’s such an easy cupcake recipe that you can literally bake these mini almonds cakes just 1 hour before tea time.</p>

<p><strong>Easy Flourless Hazelnut and Almond Chocolate Cupcake Recipe</strong><br />
1. Cream butter with sugar with electric mixer until light and fluffy.<br />
2. Beat in dark chocolate and vanilla essence.<br />
3. Beat in eggs one at a time. Mix well after each addition.<br />
4. Fold in ground almonds and hazelnuts.<br />
5. Spoon mixture evenly into the cupcake paper cases in a 12-hole muffin pan.<br />
6. Bake in preheated over at 175oC for 30min.<br />

</strong>1. Dark chocolate 100 g, chopped<br />
2. Butter 65 g, room temperature<br />
3. Nutella (chocolate hazelnut spread) 100 g<br />
4. Eggs, 2 large (75 g each), separated<br />
5. Brown sugar 75 g<br />
6. Ground almonds 100 g</p>

<p><strong>Cupcake Paper Cases<br />
</strong>Large paper cases, 10 (4.5cm base x 3.5cm height)</p>

<p><strong>Easy Flourless Nutella Chocolate Cupcake Recipe</strong><br />
1. Line a muffin pan with the cupcakes paper cases.<br />
2. Place chocolate, butter and Nutella in a bowl over a saucepan of gently simmering water. Stir until melted and smooth. Remove and set aside to cool.<br />
3. Whisk egg yolks and sugar until pale, thick and light. Stir in almonds and the chocolate mixture.<br />
4. Whisk egg whites until firm peaks form. Fold one third at a time, into the chocolate mixture.<br />
5. Spoon mixture evenly to fill prepared paper cases and level surfaces with a teaspoon.<br />
6. Bake in preheated oven at 175oC for 25 minutes or until a skewer inserted into the centre of the chocolate cupcakes comes out clean.<br />

<strong>Chocolate Cupcake Ingredients</strong><br />
1. Cocoa powder 20 g<br />
2. Boiling hot water 65ml<br />
3. Dark chocolate baking bar 75g, melted<br />
4. Butter 75 g, room temperature, melted<br />

6. Ground almonds 65 g<br />
7. Eggs 2, large, 70-75 g each<br />
8. Paper cups, medium size</p>

</strong>1. Melt the dark chocolate bar in a bowl over a saucepan of hot or simmering water.<br />
2. Cream the butter and brown sugar with a electric mixer until smooth.<br />
3. Gradually add boiling hot water to cocoa powder and stir till smooth. Make a cocoa mixure.<br />
4. Add cocoa mixture and melted dark chocolate to butter and brown sugar.<br />
5. Beat till smooth with electric mixer.<br />
6. Add eggs. Beat till smooth and semi-firm.<br />
7. Fold in the ground almonds.<br />
8. Spoon the final mixture into papercup-lined muffin tray. Fill each papercup to 2/3 full.<br />
9. Put tray into preheated oven 175oC for 30 minutes.</p>

Last night found me lounging langorously on a cozy sofa in the marvelous colonial setting of Intercontinental Hotel at Bugis Junction.<span id="more-3"></span></p>

This is fast becoming my favourite place for a lazy chill-out. The lounge exudes a charming peace and quiet that is at a total odd from the shopping buzz on the other side of the door. Victorian style sofas are locoated at comfortable distances apart, providing discreet privacy for the customers. Thankfully, the clientele here are not the loud-screeching and table-thumping crowd.</p>
<p> </p>
<p>The menu offers the usual fare of cocktails and wines. Do try a cuppa from premium arabica beans. You can smell wafts of heavenly aroma when the waitress is only metres away. You are also welcomed to order the divine cakes from The Olive Tree Restaurant.</p>
<p> <br />
The attraction of the place is really the live performace of soulful jazz singing, accompanied by a skilful pianist. Just sitting there, the music and quiet cozy ambience will slowly but surely, drain away the last bit of stress.</p>
<p> <br />
So, yeah&#8230; $12 a cuppa at Intercontinental Hotel is definitely well worth it.</p>
