Flourless Mud Cupcakes with Almonds are really mini almond chocolate cakes in a cup. Incredibly portable and flour-less. No mess!
These rich, dense chocolate cupcakes make a heavenly dessert and a wonderful choice as party cupcakes. Unlike full-size cakes, you do not need to slice and leave a mangled mess of leftover crumbs. Baking chocolate mud cupcakes are easy. You can be Nigella Lawson too!I came across this easy recipe for Flourless Mud Cupcakes with Almonds. Let me share with you. Who can resist that velvety chocolate taste with a nutty crunch in every bite?
Chocolate Cupcake Ingredients
1. Cocoa powder 20 g
2. Boiling hot water 65ml
3. Dark chocolate baking bar 75g, melted
4. Butter 75 g, room temperature, melted
5. Brown sugar 120 g
6. Ground almonds 65 g
7. Eggs 2, large, 70-75 g each
8. Paper cups, medium size
Flourless Chocolate Cupcake Recipe
1. Melt the dark chocolate bar in a bowl over a saucepan of hot or simmering water.
2. Cream the butter and brown sugar with a electric mixer until smooth.
3. Gradually add boiling hot water to cocoa powder and stir till smooth. Make a cocoa mixure.
4. Add cocoa mixture and melted dark chocolate to butter and brown sugar.
5. Beat till smooth with electric mixer.
6. Add eggs. Beat till smooth and semi-firm.
7. Fold in the ground almonds.
8. Spoon the final mixture into papercup-lined muffin tray. Fill each papercup to 2/3 full.
9. Put tray into preheated oven 175oC for 30 minutes.
You are done!

More Tips on Chocolate Cupcakes
1. While melting the chocolate, DO NOT put on the lid. We are not steaming the chocolate.
2. Try using chocolate chips, instead of whole chocolate bar. The smaller chips will melt faster.
3. Instead of almonds, you can use other nuts eg: chopped walnuts or pecans.
4. Try serving these warm mud cupcakes with a scoop of vanilla ice-cream, flaked almonds and topped with maschino cherries.
